Happiness is Raw Vegan Brownies!!

My first recipe post had to be mine and my husband’s favourite because HEALTHY chocolate brownies are a miracle!!! (and very easy to make)

For a small batch, use just half the recipe. If you can use organic ingredients, even better!


My husband, Joe, has these every day at work for an afternoon snack – and he’s still not sick of them!

2 cups of almonds ( or walnuts)

1 ½ cups of pitted dates (medjool are best)

¼ cup raisins (optional)

2tbs of Chia seeds (optional)

Small handful of oats

½ cup cacao ….or an extra tbs if you like!

Heaped tbs of coconut oil

Few drops of vanilla few drops of almond oil extract

Pinch of salt

In a separate bowl put chia seeds and 4tbs of water, stir for 30 seconds and let the seeds absorb the water ( aprox 5 mins). In the mean time blend dates and raisins in food processor . Add coconut oil. Blend. Add vanilla, almond oil, salt, oats half the nuts and cacao. Pulse Blend for 30 – 60 seconds until a chunky, crumbly, stickish mix forms. Add Chia seeds and remaining nuts. Blend 30-60 seconds. Dump mixture into a lined cake pan and press down with spoon until evenly spread and compressed. Put in freezer to set for 30 mins.  Store in the refrigerator.

You can also substitute or add any bits and bobs you fancy like dried cranberries, flaxseed, etc. It’s hard to mess up.
